This one-day intensive, guided by experienced practitioners, covers everything from animal selection and health assessment through to breaking down the carcass into quality cuts for the table.
What You’ll Learn:
– Humane culling, bleeding out, skinning, gutting, and how to prepare the animal to carcass stage
– Carcass breakdown: understanding anatomy, making clean cuts, portioning, and meat storage
Plus:
