Herbal oil infusion for use in the kitchen

Ingredients:
1. Dried culinary herbs of your choice (e.g., rosemary, thyme, basil, oregano)
2. Extra virgin olive oil (or another neutral oil like grapeseed or sunflower oil)

Equipment:
 - Clean, dry glass jar with a tight-fitting lid
 - Fine mesh strainer or cheesecloth
 - Funnel
 - Dark glass bottle is ideal for storing the infused oil but I often use
clear glass bottles and jars, if that’s all I got.

Instructions:
Choose Your Culinary Herbs: Select dried culinary herbs that you enjoy, and that pair well with your
cooking style.

Prepare the Jar: Ensure the glass jar is clean and completely dry. Choose a jar size that accommodates
the amount of oil you want to infuse.

Combine Herbs and Oil: Fill the jar about one-third to one-half full with the
dried culinary herbs. Pour the extra virgin olive oil over the herbs until they
are fully submerged. Make sure the herbs are covered completely.

Infuse: Seal the jar with the lid tightly and place it in a cool, dark place. Allow the herbs to infuse in the oil for at least 1-2 weeks, shaking the jar
occasionally.

Strain the Oil: This is optional. After the infusion period, strain the oil using a
fine mesh strainer or cheesecloth into a clean bowl or another jar. Press
the herbs to extract all the flavorful oil. I personally leave the herbs in the
jars. It looks great and is one less step to do.

Bottle and Store: Use a funnel to transfer the strained oil into a dark glass
bottle for storage. Dark bottles protect the oil from light and maintain its
quality. Label the bottle with the infusion date and the type of herbs used.

Storage: Store the infused oil in a cool, dark place. Use within a few months for the best flavor. Stores for
up to a year. Now you have a custom herbal oil infusion to enhance the flavor of your dishes. This infused
oil can be used for salad dressings, drizzling over roasted vegetables, marinating meats, and more.

Experiment with different herb combinations to suit your taste preferences! Oil infusions can also be used
for making salves and soaps.
